If you are a beginner cook, start with 3 or 4 types of high quality knives. A good foundation is to begin with a chef's knife, a paring knife, and a bread knife. Chef's knives are an all purpose kitchen knife that are used for most types of chopping, dicing, mincing, and slicing. Paring knives have a small blade for peeling fruits and vegetables. Bread knives have sharp, scalloped blades which bite the bread and avoid squashing the loaf.
